Peptitler (Grekçe: πεπτίδια; “değersiz sindirilebilirler”) tanımlanmış bir düzende, α-amino asitlerin birbirine sargılanmasıyla oluşan kesik polimerlerdir.[1] Bir amino asit kalıntısı ile başkası arasındaki bağ bir “amit bağ” yahut peptit bağı olarak bilinir.[1]
Tetrapeptit (Oligopeptit)
Proteinler polipeptit molekülleridir (yahut çok sayıda polipeptit madun birimi barındırır). Zemin ayırt peptitlerin kesik, polipeptitlerin/proteinlerin ise uzun olmasıdır.[1]
Protein sentezi esnasında her amino asit, gayrı amino asite kalıcı, kırılmayan bir polimer olan polipeptid zincirleriyle sargılanır. Polipeptid dokumasına sertlan amino asitlerin her biri dokumaya peptid sargılarıyla sargılanır. Peptid bağının oluşumu esnasında amino asitlerden birinin amino grubu ile diğerinin karboksil grubu, aradan bir deniz çıkması sonucu birleşirler.[1]
Ortalama bir polipeptit zinciri 450 amino asitten oluşur.[1] Bilinen en uzun polipeptit, ortalama 27,000 amino asitten oluşan, kas dokusunda mevcut “titin”dir. Polipeptid zincirine sertlan amino asitlere kalıntı (residue) adı verilir.[1] Zincirin bir ucundaki kalıntı, bağ yapmamış, özgür amino grubu barındırır ve N ucu olarak adlandırılır. Aynı şekilde zincirin gayrı ucundaki özgür α-karboksil grubu olan kalıntıya C ucu adı verilir.
